Introduction to Three-Course Tea Song and Dance: Three-Course Tea is the traditional way of drinking tea when the Bai people of Yunnan entertain distinguished guests. The Bai people call it "Shao Daozhao". This tea, with its unique tea ceremony of "first bitter, second sweet, and third aftertaste", was formed as early as the Ming Dynasty. The first tea, "Bitter Tea", means "to build a career, you must first endure hardship". The second tea, "Sweet Tea", means "In life, no matter what you do, you can only taste sweetness if you endure hardship." The third tea, "Aftertaste Tea", is sweet and spicy, leaving you with an endless aftertaste after drinking it. Because spicy is a homophonic word for "kin" among the Bai people, and ginger is pronounced "gǎo" in Bai language, which means wealth, so this tea expresses the closeness between the guest and the host and the host's blessing to the guest.
