Food introduction: In the old days, urban residents were usually used to eating three meals a day, two meals a day and one meal; during busy farming periods in rural areas, they would eat two meals a day and add snacks in the afternoon. People often warned children that "if you eat rice that falls off the floor, you will eat it every day." To save food, pick up the fallen rice grains and eat them.
Staple food: rice. In the old days, there was "winter and spring rice" (commonly known as "yellow rice"), which was made from white rice and had the characteristics of good swelling, crispy, non-stick, and refreshing taste. "Parboiled rice" is made by steaming the rice in a steamer, drying it in the sun, grinding it, and pounding it. There is also "Zhaojian rice", which has good swelling properties but hard rice grains. Therefore, farmers usually re-cook the leftover cold rice and uncooked rice, which can not only increase the rice yield, but also make it easier to eat when hungry.
During the wheat harvest season, make wheat cakes, gnocchi, wontons and noodles to eliminate gluten. When new grains come on the scene, you have to eat new rice. Most people cook "red bean glutinous rice" and make "glutinous rice dumplings", "book cakes", "wine fermented grains", etc. Before eating, you must first eat the Zao Lord, commonly known as "the father-in-law of the Zao family" , and also distribute some to neighbors in the village.
Dishes: In the old days, urban and rural residents mainly cooked vegetarian dishes, with a combination of meat and vegetables. Farmers mainly grow their own vegetables and rarely go to the streets to buy meat vegetables. Most people have "stinky braised food". Commonly prepared stinky foods include stinky pumpkin, stinky seaweed, stinky edamame, etc. There is also the custom of pickling various vegetables, such as pickled seaweed stems, pickled kohlrabi, pickled potherb, etc. There are also pickled pickled vegetables (commonly known as "Yanji vegetables") cut into fine pieces and dried in the sun to make dried mustard vegetables. Dried roasted pork with moldy vegetables is a traditional dish.
