Introduction to Songhelou: Songhelou is the most reputable time-honored restaurant in Suzhou. It was founded in the second year of Qianlong's reign (1737). It was originally a noodle shop, famous for its braised duck noodles and strong chicken noodles. In the late Qing Dynasty, Suzhou cuisine was operated, and famous chefs were hired. They paid attention to the selection of ingredients, knife skills and heat, and gave full play to the characteristics of stewing, braising, roasting and simmering, so that each dish has excellent color, aroma, taste and shape. Its dishes such as squirrel mandarin fish, clear Dayu (shrimp), original shark's fin, steamed pork with lotus leaf powder, snowflake crab bucket, and herring in water are famous far and wide.
