Introduction to Shitou Tan: Shitou Tan is a famous snack in Huizhou. It was famous as early as the Qing Dynasty. Even Emperor Qianlong praised it. Stone dumplings are made from mountain spring and fine flour dough, wrapped in unique fillings with various ingredients, and made into evenly thick buns sprinkled with black sesame seeds on both sides. They are placed in a flat-bottomed iron pot and a round blue stone is placed on top of the buns. Roasted with charcoal over slow fire, it is fragrant, yellow, crispy and delicious.
